Blueberry Blintzes


Combine milk, water, 2 eggs, flour, salt and 1 tablespoon sugar in a blender. Blend on medium speed for 15 seconds or until the batter is smooth and lump free.

In a food processor, combine ricotta cheese, cream cheese, powdered sugar, lemon zest, and 1 egg and blend until smooth. Chill the filling to firm it up a bit so it doesn't come out of the blintzes.

  • 4 oz cream cheese, room temperature
  • 3 tbsp powdered sugar
  • 1 lemon, zested and finely grated
  • 1 egg
  • 2 tbsp butter
  • 2 pt blueberry
  • 3⁄4 cup white sugar
  • 1 tsp corn starch
  • 1 lemon, juiced
  • 1 unsalted butter, melted, for sauteing blintzes
  • 1 powdered sugar, for dusting
